First of all let me say this is NOT a Food Blog.  I have never professed to have a Food Blog.  In fact, I like to say this is not a real Blog anyway.  You can definitely tell from the photos, and lack of any  kind of quality, that it is not a Food Blog.  BUT. . . .I do love sharing good, healthy stuff from the kitchen.  I used to say that our wellness and fitness was 80 % diet and 20 % exercise.  I now say it is 90% diet and 10% exercise, which really stinks because food is such a big, fun, enjoyable part of life - especially in the South and other parts of the world.  




Tonight I prepared a pan of cauliflower to roast.  My youngest said it looked like white broccoli.  Excellent comparison and I'm just hoping they will eat it as well as they do the roasted green broccoli!  As you can see, even our dogs are getting in the act, as they were jumping up on the counter for the cauliflower like it was a tray of beefy steak!  And they gobbled it up like any other doggie treat!

I roasted the cauliflower at 400 degrees for about 20 minutes, or until the edges turned toasty brown.  When it came out of the oven I could have eaten it like popcorn!  It really is yummy! It may not have much of a taste raw, but the roasting gives it a nutty taste and crunch that changes it completely.  When I initially bought it today I intended to "smash" it and fool my boys into eating it as mashed potatoes.  I'm so glad I didn't!
