Day 4 of nothing but rain here.  It's getting a bit hard to stay all cheerful and perky with the gray, rainy skies, but tomorrow is Friday, so that's always good for cheering us up!  AND THE FALCONS PLAY HERE ON SUNDAY!  QUITE EXCITING TO BE A FALCONS FAN!  Until Sunday, though, we gotta get through the cabin fever that is setting in.  Since the weather tends to make me want to stay inside, I thought I'd share a good "at home" meal and another At Home Workout.  I got a few good responses from the first At Home Workout, mainly that it was harder than anticipated . . . love hearing that!  I hope this one doesn't disappoint!

But, food first-  I've gone back to Cooking Light.  This month the cover touts Chicken 25 Ways!  I took one of the recipes and made it my own, using ground turkey instead and a couple of minor tweaks.  It was quite tasty, and since the boys did not know I substituted turkey for the chicken, they raved  about it!  Please don't spill the beans . . .

Spicy Thai Basil Turkey Wraps

4 Tsp Olive Oil
1/2 Cup chopped green onions
1/2 Cup chopped Red Bell Pepper
Minced Garlic
1 lb ground Turkey
1 can chopped green chiles
2 Tsp Brown Sugar
2 Tsp Lower-Sodium Soy Sauce
Black pepper to taste
1 Cup Basil Leaves
1 T fresh Lime Juice
Lime wedges
Lettuce and/or Tortilla Wraps

Heat Nonstick skillet over medium heat.  Add Oil to pan and coat.  Add green onions and saute' 2 minutes.  Add bell pepper for 1 minute.  Add garlic and saute' 30 seconds.  Remove mixture from pan.  Add a little more oil to pan if necessary.  Add ground turkey and cook until browned, stirring to crumble.  Drain well.  Return turkey to pan over medium heat.  Add chiles and cook for 1 minute; add onion mixture back to pan and stir in remaining ingredients through black pepper.  Cook 1 minute or until heated.  Remove from pan and stir in basil leaves and lime juice.  Serve with lime wedges, wrapped in lettuce or tortillas.

Makes 4 servings.  Calories:  230 (without a wrap); Protein 21 gr; Carb 10 gr; Fat 10 gr; Sodium 486 mg.

Let me say, this was really quick and easy.  I put a star on it because EVERYONE liked it.  Next time, I think I'll try it with chicken and actually follow the Cooking Light recipe.  You can get it here:  http://www.myrecipes.com/recipe/spicy-thai-basil-chicken-50400000125668/

Now, to the workout.  This is a simple, quickie workout.  If you keep moving and try not to take breaks it will get your heart rate up giving you a good mix of cardio and strength.  Let me know what you think . . .

What's your favorite rainy day meal?  Does the weather affect your mood?  Give you cabin fever?  Are you gearing up for the FALCONS to Rise Up on Sunday??

Have a Great Day!

Recipe sounds great - is the soy necessary or could I make it without - have one allergic to soy

I wouldn't worry about it! The recipe from Cooking Light also calls for a little fish sauce, so you could add that if you feel like you needed it. I think you'll like the flavors even without soy.
Let me know what you think!!
